Have you ever started down a path in your life and felt alone? And then you look around and realize that others are right there with you! I guess that's a deep way to start the first post of this blog, but hey, sometimes you gotta go deep!
My husband, Jon, and I are on a forever search to be healthy. We're kind of fad dieters. No, we've never done Atkins or shakes or anything like that, but we have done things like Body for Life, P90X, and most recently, the Fat, Sick, and Nearly Dead juicing. They've all been good (okay...maybe not the juicing) and have taught us something about nutrition and diet.
The latest bit of nutrition knowledge I've received has been from Forks Over Knives (find it on Netflix), which is a documentary that touts a whole food, plant-based diet. When my husband and I watched it (at the recommendation of our doctor), it just seemed to make sense.
Over the years, I've honed my cooking skills and learned that I enjoy using fresh ingredients and serving yummy dishes to my family. And while my family is generally healthy, there are things that we' d like to change. As a mother of two young boys, I'd like more energy, and I'd like to lose the last 10 pounds hanging on from boy #2. Jon is ready to lose some weight as well. I read one time that a person can know she is healthy when she never thinks about her body. So yeah, that's what I'd like.

Back to what I first mentioned in this long-getting-longer story, I was not sure at all how to delve into the world of plant-based foods. Then, along came Karen! Karen is my sister-in-law. She is a great cook! She is also very health-conscious, and guess what she's wanting to try out for the next 30 days??
That's right! A plant-based diet! So there she was, right along with me on this road. We decided to hang together, learn from each other (and others), and see if we could try this out. We are hoping that at the end of 30 days, we can guarantee to anyone wanting to try it that they would feel better and be healthier.
